Graffiti Eggplant

Unusual in color, but having the same shape as regular eggplant, this variety is appropriately named with its graffiti-like markings on its very smooth skin. Either ivory with purplish markings, or purplish with ivory markings, the taste is the same as any other eggplant. Bake whole or cut in half, steam, grill, microwave, sauté, braise, fry or barbecue.
Look for eggplant with smooth, shiny skin, heavy for their size and having no blemishes, tan patches, or bruises. Wrinkled, loose skin is an indication of age, and the fruit will be bitter. Keep refrigerated.
